Roslyn Zecchini immersed herself in the planning process when she and her husband completely transformed the once-casual Applebee’s in Clifton Park into Pasta Pane, an upscale Mediterranean bistro, in 2010. “It’s first time I was involved in every single aspect of opening a restaurant,” she said. The pair are investing the same time and energy in their newest venture, Boca Bistro, a former pizza shop on the busy Broadway strip in downtown Saratoga Springs.
